We make Sly Clyde Cider by adding yeast to the juice of 100% Virginia Apples, whose sugars are fully fermentable. Because it’s fermented fruit juice, cider is considered a wine in Virginia, and the production process shares much more with wine than it does with beer. Sometimes we ferment our ciders on delicious mint, like our INKJET cider. Sometimes we ferment our ciders with fresh ginger and Lemon, packing a deliciously refreshing punch, like CUT & RUN. But sometimes you just want a fresh, clean apple taste like you get in a can of SUBMERSIVE.
Brent Miles, the nationally acclaimed cidermaker who helped start Seattle Cider Company, joined Sly Clyde Ciderworks in 2017 as its Head Cidermaker. Brent was the original Head Cidermaker at Seattle Cider Company, where he led the development of the industry-shaping Semi-Sweet and Dry ciders—launching him onto a national stage. He has twice been a lecturer at Oregon State University’s Craft Cider Start-Up Workshop, presented on cider company growth at national conferences, and named one of the top “Cidermakers to Watch” by Serious Eats in 2014. His ciders have won numerous awards including multiple gold medals at GLINTCAP, the largest cider competition in the United States.
